Why is there water under my refrigerator?

Short answer

Water under a built-in has two realistic sources and both are small repairs that get expensive by being left.

Why we start there

One is the defrost drain: it has plugged with ice, the melt has nowhere to go, the trough inside the cabinet fills, and the overflow finds its way out past the door. The other is the water line feeding the ice maker, which has let go at a joint. Clear water turning up quickly at the front points at the plumbing. Cloudy water arriving slowly, with ice across the freezer floor, points at the drain. In Poway there is a useful extra clue: in a hot dry summer the evaporation tray normally keeps up with ordinary defrost melt, so standing water on the floor in August is telling you something is arriving that should not be.

What happens next

What people eventually notice is a stain or a soft patch on a wall, months after the leak started. If you have found a chalky mineral outline on the slab under a second refrigerator with no water visible anywhere, that is still an active leak and it is still worth a call.

Does a built-in have to come out of the cabinetry to be worked on?

Almost never. It is built to be serviced where it stands: the condenser is reached through the grille at floor level and both sealed systems are laid out for access from the front. Pulling one out risks the cabinetry, the flooring and, on a panel-ready column, a custom front worth more than the repair. If one genuinely must be moved, you hear why first.
